What you actually book for a Cutler Bay gathering is a licensed, insured team, a bar that photographs well, and a drinks list built with you rather than handed to you. What you do not book is a stranger who turns up and asks where the ice is.
You hold a Cutler Bay date with a 25% deposit. The balance falls due 48 hours before the gathering, and the deposit stays fully refundable until 7 days out — the same terms here as everywhere else we work.

Portions are worked out from your total headcount, so nobody is counting cups at the end of the night.
We would rather stay and clear the bar down properly than leave a job half finished, and the crew plans for the evening rather than for the minute.
Anything beyond the booked hours is agreed on the night and charged at the ordinary hourly rate.
