Half the bartending quotes we write are for 50 guests or fewer, which is usually one bartender working steadily.
It depends far more on the length of service than on the headcount, which is why the wizard asks for hours before it asks for anything else.

We would rather stay and clear the bar down properly than leave a job half finished, and the crew plans for the evening rather than for the minute.
Anything beyond the booked hours is agreed on the night and charged at the ordinary hourly rate.
